Jamie Oliver is the kind of cook we admire for his delicious recipes with clever twists. His whole chicken in milk recipe is the perfect example of both: It’s easy enough for any cook to pull off, a little unexpected, and absolutely stunning to serve and eat. It comes as no surprise, then, that Oliver also has smart and thoughtful tips for making food last longer — like this trick for preserving chile peppers (you know the ones you bought with the best intentions of turning into fresh salsa or stir-fry, but haven’t gotten to). It’s super-simple, and his tip for how to use the peppers is even more brilliant.

Freeze Your Peppers and Grate Them Later

There are a handful of fresh ingredients that can be frozen directly without any prep: Blueberries, tomatoes, and squash are some of our favorites, but chile peppers hadn’t crossed our mind until we saw this tip from Jamie Oliver. Popping them right into the freezer makes this the easiest way to preserve peppers you haven’t had a chance to use.

Freezing the peppers is a smart start, but the best part of this tip is Jamie’s suggestion for what to do with those still-frozen peppers: Grate them! You can use as little or as much as you want, and then pop the remaining pepper back in the freezer. Now you just might actually get to adding those peppers to your salsas and even Jamie’s own goulash.
